SWEET AND SOUR SALMON

8 salmon fillets

1 large onion, cut into thin rings

1 cup sugar

1 ¼ cup vinegar

4 tablespoons water

1 teaspoon salt

 Dash of pepper

Place salmon in a shallow dish.  Cover with vinegar, and let sit.

Place onions and sugar in a deep roasting pan or large poaching pan.  Cook on low-medium flame until the sugar dissolves (Make sure it doesn’t burn).

 

Place salmon in an even layer in the pan, adding the vinegar and water on top.  Bring to a boil, reduce heat and cover.  Poach at a gentle simmer 8-12 minutes or until fish flakes when tested with a fork.
